Our bountiful harvest
I spent this morning canning peaches from our own backyard! It was tiring and messy, but oh so worth it. The kids love peaches and they are so much tastier when you slave away to preserve them. It was all free, but for the sugar so I feel very blessed. I got 17 quart jars of peaches, and 9 pints plus a couple little jars of peach/raspberry jam. I also made some peach syrup- inspired by the syrup at the Palisade peach festival breakfast we attended a couple of weeks ago. Since my kitchen was in no shape to cook dinner, we had pancakes and tried out the syrup. It was great!
I have big plans to can more stuff in the coming weeks, there is a huge amount of produce available here at great prices thanks to all the farmers around. Peaches are famous here, but they also grow pears, corn, tomatoes and a bounty of other great things. I am going to do spaghetti sauce, salsa, freezer corn and pickles hopefully.

Oh they look gorgeous. You are so lucky. I would can but everything is so darn expensive.
